Wild saffron crocuses were cultivated in Western Asia some 5,000 years ago. Today, the tradition of growing saffron continues in Iran where the superb spice can often cost more than the equivalent of £7 per gram. However, we have been able to secure a limited quantity of this exquisite spice at an affordable price.
Not all saffron is alike.
Genuine saffron is measured by its colouring strength – the greater the colouring strength, the higher the quality. With top quality "Sargol" saffron the deep red stigmas have been deftly cut by hand and then separated from the lighter coloured styles. This tedious job requires a lot of experience and skill. Saffron of this quality may only contain a max. of 5% yellow plant parts (styles). Only the precious stigmas contain the distinct flavour Safranal, Crocin which gives saffron its hue and the bittersweet compound Picrocrocine.
