Instead of letting the egg glide into the vinegary water from a spoon (which makes it lose its shape slightly), you simply place it in the egg poacher. Thanks to the fine wire mesh, the egg is securely contained, yet the boiling water can circulate freely.

Unlike most poaching devices, this one keeps the egg in direct contact with the water and therefore cooks twice as fast. The handle of the silicone lid remains cool and so is safe to hold to remove the egg. Excess water runs off from below. The cooked egg can be removed from the mould easily with a big spoon.
